INGREDIENTS
- 1 tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 can (400g) diced tomatoes
- 2 cups vegetable broth
- 1 tsp dried basil
- 1/2 tsp sugar
- Salt and black pepper to taste
- 1/2 cup heavy cream (optional)
INSTRUCTIONS
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened.
- Add garlic and cook for 1 minute until fragrant.
- Stir in diced tomatoes, vegetable broth, basil, sugar, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Use an immersion blender to puree the soup until smooth. (Alternatively, carefully transfer the soup in batches to a blender.)
- Stir in heavy cream if using, and adjust seasoning as needed. Serve hot.
