INGREDIENTS
- 1 cup dried green or brown lentils, rinsed
- 1 large carrot, diced
- 1 celery stalk, diced
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 tsp dried thyme
- 1 tsp ground cumin
- 4 cups vegetable broth
- 2 tbsp olive oil
- Salt and black pepper to taste
INSTRUCTIONS
- In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Cook until vegetables are softened.
- Add garlic and cook for 1 minute until fragrant.
- Stir in lentils, diced tomatoes, thyme, cumin, salt, and black pepper.
