INGREDIENTS
- 2 large sweet potatoes, peeled and diced
- 1 can black beans, drained and rinsed
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- Salt and black pepper to taste
- 8 small tortillas
- Chopped fresh cilantro for garnish
- Optional toppings: avocado, sour cream, salsa
INSTRUCTIONS
- Preheat oven to 200°C (400°F). Toss sweet potato cubes with olive oil, cumin, smoked paprika, chili powder, salt, and black pepper. Spread on a baking sheet.
- Bake for 20-25 minutes, or until sweet potatoes are tender and lightly caramelized.
