INGREDIENTS
- 300g pasta of your choice
- 2 ripe avocados
- 2 cloves garlic
- 1/4 cup fresh basil leaves
- 1/4 cup lemon juice
- 1/4 cup olive oil
- Salt and black pepper to taste
- Grated Parmesan cheese for serving (optional)
INSTRUCTIONS
- Cook pasta according to package instructions. Drain and set aside.
- In a food processor, combine avocados, garlic, basil, lemon juice, and olive oil. Blend until smooth. Season with salt and black pepper to taste.
- Toss the cooked pasta with the avocado sauce until well coated.
- Serve with grated Parmesan cheese if desired.
