INGREDIENTS
- 2 large sweet potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 onion, diced
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp ground cumin
- Salt and black pepper to taste
- 2 large eggs
- Fresh parsley for garnish
INSTRUCTIONS
- Heat olive oil in a large skillet over medium heat.
- Add sweet potatoes and cook, stirring occasionally, for about 10 minutes until they start to soften.
