INGREDIENTS
- 1 cup quinoa, rinsed
- 2 cups water
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped red onion
- 2 tbsp olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
INSTRUCTIONS
- In a pot, bring water to a boil. Add quinoa, reduce heat, and simmer for 15 minutes until water is absorbed and quinoa is tender.
- Let quinoa cool.
- In a bowl, combine cooled quinoa, avocado, cherry tomatoes, and red onion.
- Whisk olive oil and lemon juice together, then pour over salad.
- Toss to combine and season with salt and pepper.
