INGREDIENTS
- 1 can chickpeas (400g), drained and rinsed
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and black pepper to taste
INSTRUCTIONS
- In a large bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, olives, and feta cheese.
- In a small bowl, whisk together olive oil, red wine vinegar, and dried oregano. Season with salt and black pepper to taste.
