Stuffed Zucchini Boats are a versatile and healthy side dish, perfect for adding a burst of flavor to your meal.
INGREDIENTS
- 4 medium zucchinis, halved lengthwise
- 1 cup cooked quinoa
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh basil
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
INSTRUCTIONS
- Preheat oven to 180°C (350°F).
- In a bowl, mix cooked quinoa, tomatoes, basil, Parmesan cheese, salt, and pepper.
- Brush zucchini halves with olive oil and scoop out the center to create boats.
- Fill zucchini boats with quinoa mixture and place on a baking sheet.
- Bake for 20-25 minutes, or until zucchini is tender.
- Serve warm.
