Quinoa Salad is a light and refreshing side dish that pairs well with any main course.
INGREDIENTS
- 1 cup quinoa
- 2 cups water
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup red onion, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
INSTRUCTIONS
- Rinse quinoa under cold water. In a pot, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes until water is absorbed.
- Let quinoa cool, then combine with tomatoes, cucumber, and red onion. Toss with olive oil, lemon juice, salt, and pepper.
- Serve chilled or at room temperature.
