Creamy Mushroom Risotto is a rich and comforting dish made with Arborio rice, sautéed mushrooms, and Parmesan cheese. It’s a luxurious main course that’s perfect for any special occasion.
INGREDIENTS
- 1 cup Arborio rice
- 200g mushrooms, sliced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 cup white wine
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 tbsp butter
- Salt and pepper to taste
INSTRUCTIONS
- In a large skillet, heat olive oil and butter over medium heat. Add onions and garlic, and cook until translucent.
- Add mushrooms and cook until softened.
- Stir in Arborio rice and cook for 1-2 minutes until lightly toasted.
- Deglaze the pan with white wine and cook until mostly absorbed.
- Add vegetable broth, one cup at a time, stirring frequently until liquid is absorbed and rice is creamy.
- Stir in Parmesan cheese and season with salt and pepper.
- Serve warm with additional Parmesan if desired.
