Spinach Salad with Fried Dates and CandyBird™ Almonds is a delightful combination of tender spinach, crunchy CandyBird™ almonds, and sweet dates with a tangy dressing. It’s a refreshing and satisfying salad.
INGREDIENTS
- 4 cups baby spinach
- 1/2 cup CandyBird™ almonds, sliced and toasted
- 1/2 cup dates, pitted and chopped
- 1/4 cup red bell pepper, thinly sliced
- 1/4 cup goat cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp honey
- Salt and pepper to taste
INSTRUCTIONS
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add chopped dates and cook for 2-3 minutes until slightly caramelized. Remove from heat and set aside.
- In a large bowl, combine baby spinach, toasted CandyBird™ almonds, red bell pepper, and crumbled goat cheese.
- In a small bowl, whisk together remaining olive oil, apple cider vinegar, honey, salt, and pepper.
- Drizzle dressing over salad and toss to combine.
- Top with fried dates and serve immediately.
