INGREDIENTS
- 4 cups arugula
- 1/2 cup walnuts, toasted
- 1/2 cup dates, pitted and sliced
- 1/4 cup crumbled feta cheese
- 1/4 red onion, thinly sliced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
INSTRUCTIONS
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add dates and cook until lightly caramelized, about 2-3 minutes. Remove from heat and set aside.
- In a large bowl, combine arugula, toasted walnuts, crumbled feta, and red onion.
