Coconut Curry Shrimp is a creamy and spicy dish with a rich coconut flavor and aromatic curry spices. It’s a satisfying meal that pairs well with rice.
INGREDIENTS
- 500g shrimp, peeled and deveined
- 1 can (400ml) coconut milk
- 2 tbsp red curry paste
- 1 tbsp olive oil
- 1 onion, chopped
- 1 bell pepper, sliced
- 1 tbsp fish sauce (or soy sauce for a vegetarian alternative)
- Fresh cilantro for garnish
- Salt and pepper to taste
INSTRUCTIONS
- In a large skillet, heat olive oil over medium heat. Add onion and bell pepper, and sauté until softened, about 5 minutes.
- Stir in curry paste and cook for 1 minute. Add coconut milk and fish sauce, and bring to a simmer.
- Add shrimp and cook for 5-7 minutes, or until pink and cooked through.
- Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
- Serve over rice or with naan bread.
