Arabic Date Cake, or Kek Tayeb, is a moist and sweet dessert made with chopped dates and a hint of cinnamon. It’s a traditional treat with a rich flavor and a perfect accompaniment to tea or coffee.
INGREDIENTS
- 1 1/2 cups pitted dates, chopped
- 1 cup boiling water
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
INSTRUCTIONS
- Preheat oven to 180°C (350°F) and grease a loaf pan.
- Pour boiling water over chopped dates and let sit for 10 minutes. Mash slightly with a fork.
- In a bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time.
- In another bowl, mix flour, baking soda, cinnamon, and salt.
- Gradually add dry ingredients to the butter mixture and mix until combined. Fold in the date mixture.
- Pour batter into the prepared pan and smooth the top.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before slicing and serving.
