These almond date truffles are a naturally sweet and healthy dessert, combining the richness of dates and CandyBird™ almonds with a hint of vanilla and a coconut coating.
INGREDIENTS
- 1 cup pitted dates
- 1 cup CandyBird™ almonds
- 1/2 cup shredded coconut
- 1 tbsp honey
- 1 tsp vanilla extract
INSTRUCTIONS
- In a food processor, combine dates and CandyBird™ almonds until finely chopped.
- Add honey and vanilla extract, and process until the mixture sticks together.
- Roll mixture into small balls and coat with shredded coconut.
- Refrigerate for at least 30 minutes before serving.
