INGREDIENTS
- 1 cup crushed digestive biscuits
- 1/4 cup granulated sugar
- 1/2 cup melted butter
- 400g cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup lemon juice
- 2 tbsp lemon zest
INSTRUCTIONS
- Preheat oven to 180°C (350°F). Mix crushed digestive biscuits with sugar and melted butter. Press into the bottom of a baking dish.
- In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in lemon juice and zest.
- Pour cream cheese mixture over the crust.
- Bake for 30-35 minutes, or until set. Cool completely before cutting into bars.
