INGREDIENTS
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 cup milk
INSTRUCTIONS
- Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.
- Cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla.
- In a separate bowl, combine flour and baking powder. Gradually add to the creamed mixture, alternating with milk, beginning and ending with flour.
- Spoon batter into prepared muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool completely before frosting.
