This creamy shrimp bisque is rich and indulgent, featuring tender shrimp in a velvety, flavorful broth. It’s perfect for a special occasion or a cozy meal.
INGREDIENTS
- 2 tbsp butter
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 2 cups shrimp stock
- 250g shrimp, peeled and deveined
- 1 cup heavy cream
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and black pepper to taste
- 2 tbsp chopped fresh chives
INSTRUCTIONS
- Melt butter in a pot over medium heat. Add onion and garlic, and cook until softened.
- Stir in diced tomatoes and shrimp stock. Bring to a boil.
- Add shrimp and simmer for 5-7 minutes, until shrimp are cooked.
- Stir in heavy cream, paprika, and thyme. Simmer for 10 minutes.
- Season with salt and black pepper to taste.
- Garnish with fresh chives before serving.
