This comforting chicken and rice soup is a perfect meal for chilly days. It’s packed with tender chicken, vegetables, and rice, all simmered in a flavorful broth.
INGREDIENTS
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup cooked chicken, shredded
- 1 cup rice
- 6 cups chicken broth
- 1 bay leaf
- 1 tsp dried thyme
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley
INSTRUCTIONS
- Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
- Add carrots and celery, and cook for 5 minutes.
- Pour in chicken broth and bring to a boil.
- Add chicken, rice, bay leaf, and thyme. Reduce heat and simmer for 20 minutes, until rice is tender.
- Season with salt and black pepper to taste.
- Stir in fresh parsley before serving.
