INGREDIENTS
- 2 tbsp butter
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups diced potatoes
- 4 cups fish stock
- 300g white fish fillets, cut into chunks
- 1 cup heavy cream
- 1 tsp dried thyme
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley
INSTRUCTIONS
- Melt butter in a pot over medium heat. Add onion and garlic, and cook until translucent.
- Add diced potatoes and fish stock. Bring to a boil.
- Reduce heat and simmer for 15 minutes, until potatoes are tender.
- Add fish and cook for another 5 minutes.
- Stir in heavy cream and thyme. Simmer for an additional 5 minutes.
- Season with salt and black pepper to taste.
