INGREDIENTS
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (400g) diced tomatoes
- 2 cups seafood stock
- 200g shrimp, peeled and deveined
- 1 tsp dried basil
- 1/2 tsp dried oregano
- Salt and black pepper to taste
- 2 tbsp chopped fresh basil
INSTRUCTIONS
- Heat olive oil in a pot over medium heat. Add onion and garlic, and sauté until softened.
- Stir in diced tomatoes and seafood stock. Bring to a boil.
- Add shrimp, basil, and oregano. Reduce heat and simmer for 5-7 minutes, until shrimp are cooked through.
