This classic chicken noodle soup is a comforting and hearty meal, perfect for chilly days. Tender chicken, vegetables, and egg noodles are combined in a flavorful broth.
INGREDIENTS
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup egg noodles
- 1 bay leaf
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley
INSTRUCTIONS
- Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
- Add carrots and celery, and cook for another 5 minutes.
- Pour in chicken broth and bring to a boil.
- Add chicken, egg noodles, and bay leaf. Reduce heat and simmer for 20 minutes, until noodles are tender.
- Season with salt and black pepper to taste.
